2. This general nutrition class is for the motivated and online-savvy student.
3. This is not a work-at-your-own-pace class. You will have assignments due each week.
4. This class is fully online. There are no mandatory meetings.
5. Nutrition 210 and Nutrition 211 are parallel In other words, you would not want to take both courses as they cover the same general topics. Nutrition 211 covers more of the details of physiology and chemistry in nutrition that individuals going into the health professions will find valuable.

Instructor Contact Expectations: 

• Please note that Email is the best and fastest way to reach me.
• I will generally respond within 24 hours. During those times in the semester when things are really, really busy . . . the turn-around time may 48 hours.
• I generally log off around 7pm every day and do respond to emails on the weekends (however, the turn-around time for the weekend may be as long as 48 hrs)

Course Environment:

This online course will be using a Web-based Learning Management System Canvas as the method to disseminate information. Canvas provides the framework for the course including PowerPoint presentations, student data files, the tools to receive and send course materials, and a grade book. Using the communication tools, you can communicate using e-mail, and you can share materials and ideas with other course participants via the discussion forums and groups.

Class opens / Accessing Canvas:

Prior to the Monday classes start, you will receive an email to your my.Cuesta.edu address providing you with a reminder that class will be starting and log in procedures for Canvas, the learning management system (LMS) used to deliver course content. You can access Canvas by logging into MyCuesta, then clicking on the Resources Tab, then clicking on Canvas in the Online Learning Channel, or by typing the Canvas address (https://cuesta.instructure.com/) into your browser address bar. Do not bookmark / favorite the canvas site after your login, or you will get an error message next time you try to log in. You must access the canvas log in directly.

Online Learning:

If you have never taken an online class or this is your first experience with Canvas, please be patient with yourself. Online classes are not inherently easier, although they may be much more convenient for many students. You should expect to spend at least as much time, if not more on this course as you would on a course that meets face to face. Since there is no lecture component, much of this time will be self-directed and there will be a substantial amount of reading, viewing, studying, and writing required. This course is completely online using Canvas; all coursework (discussions, assignments, quizzes) is submitted online. There are no face-to-face meetings. Please be prepared to spend 8 - 12 hours per week on coursework for this class

Course Description

Nutrition 211: Introduction to Nutrition for Health Professionals.

Studies the nutritional needs of the human life cycle and examines the biological function and chemical classification of nutrients. Relates nutrition concepts to health and disease. This course is designed for current or prospective members of health professions such as nurses, physicians, physician assistants, dietitians, dentists, dental hygienists, physical therapists and occupational therapists.

Student Learning Outcomes

1. Students will analyze the nutritional adequacy of their own food intake and write a report making recommendations to maximize nutritional status that can be applied to their own good health.
2. Students will critically review and synthesize the findings in scientific literature and recommend factors to improve nutritional status in at risk populations.
3. Students will assess the effect of nutritional lifestyle factors on mortality and formulate recommendations to minimize the risk factors for chronic diseases.
4. Students will investigate nutrition information from the Internet and critique the accuracy and reliability of the information as it applies to health care.

Text Book and Materials

“Your course materials are being delivered digitally via Canvas through the Cuesta Inclusive Access program.  Please be sure to access your course materials through the Canvas on the first day of class to make sure there are no issues in the delivery.   You will automatically have access to the course materials on Day One without entering a code or being charged upfront.  After the Cuesta add drop date, your student bursar account will be billed at a discounted rate for the required course materials representing significant savings for you as the student.  If you choose to not have your account be billed, you must “opt out” before the required deadline.  If you do not opt out, you will be charged.  We highly recommend you do not opt out if you are going to continue in this course because this is the lowest cost available for Connect.  After you have paid for the product, you will have access for the remainder of the term.”

Materials Requirements:

• Connect-Includes the online SmartBook: “Perspectives in Nutrition, Byrd-Bredbenne, 2022 12th Ed" and includes the NutritionCalc Diet Analysis Software (on the first day of class you will activate the book directly from Canvas link). Your myCuesta account will reflect the charge and you will pay from there. You must use this online version, but you can order a printed version additionally if you desire.

• Computer Requirements:

1. You need a reliable computer (generally no more than 4 years old) and an Internet connection that will not lose service in the middle of an exam.
2. You need a Cuesta e-mail account (check your Cuesta email every day).

4. Your computer must have all of the capabilities of viewing YouTube, pdfs, PowerPoints, etc.

Course-specific waitlist procedure

1. The Cuesta automatic waitlist is in effect until 24 hours before class begins.
2. Remember that many students can get into this class by the waitlist procedure if they check their email daily; you are given 24 hours to accept your spot through the Cuesta College waitlist process.
3. I will give add codes to waitlisted students one day before class.
4. If you are on the waitlist when notifications close Sunday 12:00 am then email me to request an add code, giving me your full name, Cuesta email, and course CRN.
5. Students have until Wednesday night (11:59 pm) to enter their add codes.
6. All students (no matter when they register) will be held to the same deadlines for this class.
7. All students should have read the Welcome Letter in its entirety prior to enrolling in my DE classes.

Grades: You are responsible for following your grades in both Canvas and Connect and waiting to email the instructor until 1 week after assignments are due with questions. You are also responsible for any final grade question by the last day of final exams. Grades will not be updated for any reason after the Friday of the last day of classes so check them!

Computer Skills necessary to succeed in the course:

1. You are expected to already the computer skills for an online class such as saving in pdf, manipulating and attaching files, and using different forms of interactive computer programs.
2. Computer assistance will not be available for this course. Please consider the half unit- Intro to Online- course before taking this course.

Time requirements necessary to succeed in the course:

1. You have something due each week in this course.
2. You may work ahead if assignments are open, but “Discussion/Forum” responses must be done the week they are due.
3. You will notice partial grades in the Discussion Board as the instructor reads through and grades the posts. Please do not be concerned with grades until the instructor messages you to check grades each week because she may read one of your posts one day and a reply to a different post a few days later.
4.
