Nutrition 230— Nutrition for Fitness and Sport

In this course, we’ll explore how food choices affect your energy, health, fitness, and athletic performance. Whether you’re an athlete, fitness enthusiast, or simply curious about how nutrition supports wellness, you’ll learn how to make science-based decisions for lifelong health.

  • Log in to Canvas on the first day of class.

  • Activate Connect (SmartBook) using the link in Canvas. (This is “First Day Access,” so you can begin reading and participating immediately.)

  • Start with the Welcome Module for orientation and setup.

Important: If you don’t access the course by the end of Week 1, college policy requires that you be dropped. Please reach out if you need help logging in or getting started!


📘 Course Description

Presents a specialized course relating nutrition to physical performance and fitness, exploring current trends, controversies, and analyzing various dietary recommendations relating them to specific physical needs.
Advisory: NUTR 210  Transfer: CSU

🖥️ Format: Fully online (asynchronous). There are no required meetings—assignments are due each week.


🧠Student Learning Outcomes

By the end of this course, you will be able to:

  1. Interpret the basis of the scientific method as it is used in developing hypotheses and theories, then apply the scientific method-based research, such as in peer-reviewed intervention, epidemiological, lab, and case studies, to the critical evaluation of nutrition-related literature and media, thus differentiating between proven scientific-based research and myth as it applies to nutrition for health and athletic competition.

  2. Develop a basic understanding of the chemical structure of the six classes of nutrients and the substances therein; their action, interaction, and balance in relation to health and disease and exercise performance; and the process by which the human body digests and metabolizes food substances in relation to the human energy systems under a variety of conditions.

  3. Judge the effect of nutrition, hydration, and lifestyle factors that contribute to chronic diseases (and leading causes of death in the United States), then establish goals and assess one’s own diet for nutritional adequacy, practically apply lifestyle changes, through food label-reading, food safety practices, and altered dietary choices, which are personalized for the individual’s nutrient and phytochemical needs based on health status, body weight differences and goals, optimal sports performance, and differing environmental conditions.

Required:

  • Connect (includes SmartBook): Nutrition for Health, Fitness, and Sport by Williams, current edition (~60 dollars).

  • Access directly through Canvas on the first day.

  • Your myCuesta account will reflect the charge.

  • A print version is optional.


💻 What You’ll Need for Technology 

  • Reliable computer (preferably < 4 years old)

  • Stable internet connection

  • Ability to view PDFs, PowerPoints, and videos

  • Browser: Use Chrome; Firefox may be required for some textbook links

  • Check your Cuesta email daily and ensure Canvas notifications are turned on

  • Expect weekly deadlines, mostly on Fridays.

  • You may work ahead if assignments are open.

  • Discussions must be completed during their assigned week.

  • Take the Student Readiness Quiz before class begins.
