Hello Health Education students!  I have boundless enthusiasm and expertise for this class!  Health is one of the most valuable classes you will ever take!  Health encompasses all parts of YOU and threads us together in the ever-more-global world.  What an amazing opportunity we all have in this class to learn and grow and expand ourselves. Instructor Contact Expectations: 

I am able to return most emails M-Th within a 24 hour window during the normal semester time span. Emails that arrive M-Th before 1:15 will likely be answered the same day.  For email arriving  F-Sat-Sun, I should be able to respond within a 48 hour window.  There have been moments when an email is delayed or waylaid arriving to my inbox.  Feel free to “poke” me again if you have not heard back in the time frames I listed.

Course Description

Examines the major health problems facing non-dominant/minority ethnic groups related to acculturation, assimilation, and biological variations. Various health beliefs systems will be analyzed to promote prejudice reduction and understanding of cultural differences.

Student Learning Outcomes:

1) Identify barriers that non-dominant groups face to access or receive health care in the U.S. today.

2) Compare and contrast nutrient analyses of various ethnic diets. (Such as demonstrate accurate analysis of ingredients on a food label and/or nutrition assessment. Examples: Identify saturated fats, trans-fats, salt and refined sugar.)

3) Describe lifestyle changes you have made or plan to make which promote personal health and mental well-being.

4) Identify lifestyle changes that will reduce risk of major chronic communicable diseases based upon your family health history, environment, and/or current lifestyle choices.

5) Evaluate contemporary media and societal institutions for discrimination and biased thinking processes related to multi-cultural health.

6) Analyze conflict in inter-group relations between diverse groups and cultures as it relates to multi-cultural health.

7) Explore various international health issues.

Course Environment:

This on-campus, face to face (in person) course meets twice a week for one hour and 20 minutes/class. Class consists of lecture, power-points, videos, class discussions, and class activities.  Class uses a Web-based Learning Management System Canvas as the method to disseminate information. Canvas provides the framework for the course including PowerPoint presentations, student data files, the tools to receive and send course materials, homework, quizzes, and a grade book.  This course ALSO uses a text book that also uses a learning management system called "CONNECT."  Your textbook is housed here, many of your quizzes are housed her, and most of your homework is housed here.  CONNECT and canvas are linked to each other.

Class opens / Accessing Canvas (our learning management system) and CONNECT:

You should be able to view this course before the start of the semester.   You can access Canvas by logging into MyCuesta, then clicking on the Resources Tab, then clicking on Canvas in the Online Learning Channel, or by typing the Canvas address (https://cuesta.instructure.com/) into your browser address bar. Do not bookmark / favorite the canvas site after your login, or you will get an error message next time you try to log in. You must access the canvas log in directly.

Please be prepared to spend 9 - 12 hours per week on coursework for this class.  Cuesta classes expect 3-4 hours of work including class time for each unit and HEED is a 3 unit class.

 Text Book and Materials

  • Connect Core Concepts in Health, 17th ed, Insel et. al. Mc Graw Hill 2022 .  You will access your textbook through CONNECT which students purchase.  CONNECT will open a purchase window the first time you click on an assignment or via McGraw Hill link on our canvas home page.  There is free access for the first 2 weeks.  Besides accessing the textbook through CONNECT, it also offers many student study aids and many of your assignments are linked through CONNECT as well.

Add / Drop Policy:  If there is room in the class, I will add students up to the add deadline (Aug 30, 2020.) Students who do not log in the first week or who miss the first synchronous class on Aug 18 may be dropped.  Student who do not log in for longer than 10 days may be dropped.  Here is Cuesta policy for adds and drops:
